Few people know that the true, velvety texture of iconic hummus does not depend on the amount of olive oil or tahini, but on... water temperature! Adding a few ice cubes or ice-cold water directly to the blending chickpeas causes rapid aeration of the paste. As a result, the protein emulsifies, and the hummus gains an incredibly light, almost cloud-like texture instead of resembling a heavy puree.
