He developed sensory sensitivity, precision and mastery of culinary art by devoting himself to his love for hotel gastronomy, which has lasted for almost 30 years. In his kitchen, following the principle "the simpler, the tastier", he values the sublime simplicity of dishes based on the perfection and fleeting seasonality of local products.
Despite the soul of a sensitive minimalist, when composing dishes he likes to experiment, reaching for non-obvious and surprising products.
Often combining traditional and innovative approaches, he re-establishes the well-trodden paths of his culinary journeys.
In his original vision of the dishes on the spring-summer 2024 menu, he focuses on the quality and sensuality of the products, presenting a cuisine that can be described as an impressive redefinition of classic Polish and European dishes.
